葱油 Chicken Thighs

Ingredients:

Chicken Thigh, Green Onion, Ginger, Garlic, White Pepper Powder, Soy Sauce, Shaoxing Wine (or Dry Sherry), Light Soy Sauce (or Salted Soy Sauce), Oyster Sauce (optional), Sesame Oil

Step 1: Cut the chicken thighs into bite-sized pieces and wash them clean. Then mix with a small amount of flour and stir well to coat evenly.

Step 2: Marinate the chicken pieces in soy sauce, Shaoxing wine (or dry sherry), and white pepper powder for about 15 minutes.

Step 3: Chop green onion into segments; ginger and garlic into slices; Sichuan peppercorns or chili flakes into circles. Set aside.

Step 4: Heat oil in a wok or large pan over medium-high heat. Add chopped green onion, ginger slices, garlic slices for quick frying until fragrant. Then add marinated chicken pieces and stir-fry until both sides are golden brown.

Step 5: After cooking the chicken to golden brown colorings from both sides add soy sauce, light soy sauce (or salted soy sauce) oyster sauce if using). Stir-fry everything together well then pour in some water if needed to create more gravy before adding back sliced Sichuan peppercorns or chili flakes & simmering it all together for around 15-20 minutes or till it becomes thick like a soup. Finally drizzle sesame oil on top & garnish with minced scallions before serving out of pot immediately!
